In practice
Where it goes
Restaurant and hotel à la carte kitchens where the hot line is an island worked from both sides. Twelve burners and a charbroiler in one run means two or three cooks back to back; the hood outline marks the canopy and its drip edge. It earns its place in kitchen layouts, exhaust drawings and the MEP plan for gas and the fire suppression system.
Clearances to leave
Treat the 9 ft 10 in (300 cm) island as a two-cook line and keep 48–60 in (120–150 cm) aisles along both long sides, with 24 in (60 cm) of landing counter beside the charbroiler end for plating. The hood canopy should overhang the 6 ft 7 in (200 cm) cooking surface and sit 26–30 in (65–75 cm) above the burners.
Pairs with
Set it between Cooking island with four round kettles under hood and the pass of Curved-end serving counter with four round wells, and keep Prep counter with sink, drainboard and mixer behind the cooks. Stainless splash panels on the hood edge finish the line.
