In practice
Where it goes
Self-service restaurants, staff cafeterias and hotel breakfast buffets, where the public walks along a serving counter with hot and cold wells. The curved end lets the line turn without a sharp corner and the four round wells are bain-marie pots or soup kettles. Place it between kitchen and dining room on a ¼ in = 1 ft (1:50) layout and on the customer-flow plan.
Clearances to leave
The customer side needs a waiting lane of 36 in (90 cm) plus 24 in (60 cm) per person along the 18 ft (550 cm) counter, and the serving side needs a 40 in (100 cm) aisle for staff to restock. The 7 ft (213 cm) depth includes the tray slide, so the hot wells sit about 24 in (60 cm) from the customer's reach.
Pairs with
Serve it from Cooking island with twelve burners and chargrill under hood behind the pass, and restock it from Food cart with four compartments and bumpers. A matching Counter with three rear compartments and long well continues the line for cold dishes.
